I’m not a sports fan, so it’s surprising that I even know the
Super Bowl is this weekend. I think the tip off came for me when
the coupons in the Sunday paper skewed toward such as items as
chips, dips and salsas, all things that will be staples at many a
party. While I might not be watching the Super Bowl this weekend, I
know a lot of other people who will have their eyes glued to the
screen. And I think we can all go one better than a store-bought
dip and chips to please our party guests. Here are some of my
favorite go-to snacks for when I am invited to parties and I want
to bring along a dish to share.

While I might not be watching the Super Bowl this weekend, I know a lot of other people who will have their eyes glued to the screen. And I think we can all go one better than a store-bought dip and chips to please our party guests. Here are some of my favorite go-to snacks for when I am invited to parties and I want to bring along a dish to share.
Some of these recipes are ones that my family borrowed from coworkers who shared them at the office, including a dip and meatballs in a sour-and-sweet sauce. The seven-layer dip recipe is one that I find myself making anytime I am invited to a casual get-together. It’s easy to pick up a seven-layer dip at most stores, but this built-at-home dip just hits the spot so much better than a store-bought concoction. The recipe is simple, but it packs in a lot of flavor. We always joke in our family that this dip can replace a meal since it has most of the food groups – protein, diary, vegetables.
So take some time this weekend to put together one of these treats and your party is sure to be a winner.
Seven-layer dip
1-16 oz. can Rosarita fat-free refried beans with green chilies
2 tbsp. Taco seasoning (add more if more flavor is preferred)
1-16 oz. container guacamole dip (not guacamole, but the dip stuff that is found near the cheeses in the grocery store)
1-16 oz container sour cream
1 bunch green onions, chopped thinly
1-8 oz. can sliced black olives
3 large tomatoes, seeded and diced
1-16 oz. bag shredded Mexican cheese (choose Kraft’s Taco cheese for added flavor)
1 bag tortilla chips
Mix the refried beans and taco seasoning well. Spread into the bottom of a casserole dish in a half-inch layer. Above that spread the guacamole dip in a half inch layer, then the sour cream. Top with green onions, then black olives, and the tomatoes. Sprinkle the cheese across the entire dish.
Chill in the refrigerator for at least an hour to let layers set and then serve with tortilla chips of your choice.
Grape jelly meatballs

2 lb. hamburger
1 c. bread crumbs
Minced onion
1/2 c. milk
2 eggs
2 tbsp. parsley flakes
2 tsp. salt
1 tsp. pepper
1 tsp. Worcestershire sauce
Mix ingredients together and make small meatballs. Brown and bake at 350 degrees for 35 minutes.
Sauce:
1-12 oz. bottle chili sauce
1- 16 oz. jar grape jelly
Combine and bring to a boil. Spread over meatballs. Cook meatballs and boiled sauce in crock pot for 2 to 3 hours. Crock pot can be used to keep the food warm during the party.
Sliders with Chipotle mayonnaise

Chipotle Mayonnaise:
1 c. mayonnaise
2 chipotles in adobo sauce
1 tbsp. adobo sauce
1/2 lime, juice
Salt and freshly ground black pepper
Add all the ingredients to a food processor and puree. Season to taste with salt and pepper. Set aside until the burgers are ready to serve.
Sliders:
1 to 1 1/2 lbs. ground chuck, 80/20
Salt and freshly ground black pepper
Cheese slices, your choice
Mini burger buns
Pickles
Red onion, sliced
Preheat grill over medium-high heat.
Form the meat into two to three oz. portions, packed tightly. Season with salt and pepper.
Place the sliders on the grill. Wait until they are nice and crusty on the first side, about four to five min. and then flip and cook another four min. When the sliders are about done, top with desired cheese and close the grill, allowing the cheese to melt.
Place the slider on mini burger buns and top with chipotle mayonnaise and any other desired toppings.
