Paine’s new pasta machine adds old favorites to menu
With the help of a new pasta-making machine and the handy work
of Dave Cook, Paine’s Restaurant has added several new items to the
menu.
A few weeks back Paine’s Restaurant obtained the new pasta maker
that flattens and kneads the dough to just the right level. New
offerings include the Cook’s family’s old pasta recipes
– his parents owned Cademartori’s Restaurant in San Juan for 40
years and he made pasta there for 25 years – such as an array of
ravioli, lasagna and manicotti items.

A few weeks back Paine’s Restaurant obtained the new pasta maker that flattens and kneads the dough to just the right level. New offerings include the Cook’s family’s old pasta recipes – his parents owned Cademartori’s Restaurant in San Juan for 40 years and he made pasta there for 25 years – such as an array of ravioli, lasagna and manicotti items.
Cook on Wednesday explained how the machine thins the dough to the right texture and thickness, noting, “I’m probably one roll away right now,” shortly before the lunch crowd was set to arrive. From there Wednesday, he laid the roll over a six-foot table covered in rice flour, swept off excess flour and continued his work, spreading the filling over the dough. Showing a finished product, he said, “Just like Grandma used to do it.”
Paine’s co-owner Tony Garcia said they decided to add the new pastas because customers had been asking for it.
