The Heavenly Bakery, taking over the spot of the former Elegant Touch in downtown Hollister, hopes to open before Valentine’s Day, according to one of the owners.

Owners Sheila and Bob Stevens are opening the bakery. While already running two businesses in downtown – Knife & Fork and She’s – they plan to open the third business where they will focus on cookies, bagels, cakes and breads while selling such products as ice cream, breakfast items and coffee.

Sheila Stevens said they initially pushed for Feb. 1 to open but have altered their expectations to hoping for a launch before the Feb. 14 holiday. She noted how the sign is being placed but not finished yet. They also are taking care of such preparations as tasting bread and interviewing bakers. Stevens said she is surprised because there are “plenty of bakers out there.”

She pointed out how Knife & Fork recently won the chamber of commerce’s award for best hospitality business and said She’s is “doing well.”

“I think it’s an exciting thing for downtown,” she said. “I didn’t even realize people were going to be so interested in it.”
